There is so much to love about this easy recipe. It can help spruce up your gut, allow your body to heal inflammation, nourish your adrenals, balance blood sugars, and let you feel lighter and brighter.

It brings in the familiar textures of a big bowl of breakfast cereal, without all of the refined sugars, grains, eggs, and dairy, making this a perfect breakfast for anyone, especially if you are trying to follow an anti-inflammatory protocol for healing from chronic health conditions, allergies, diabetes or autoimmune. It is both paleo and vegan, low in fat, loaded with fiber, sweet & delicious, and contains a full daily dose of selenium, perfect for nourishing the thyroid.

My Apple Crunch Cereal is a play on the crunchy flaked cereals that we all grew up with, and the warming spices and taste of apple pie. You are going to love this big bowl of cereal that never gets soggy!

One of the best parts of this recipe for me is the crunch factor. I have big front teeth and I love to nibble, lol. This is one of the reasons that I am not a daily smoothie gal. Don’t get me wrong, I love a good smoothie. However, munching on my food instead of drinking up the purée not only gives me the satisfaction of sinking my choppers into something that feels more substantial, it stimulates the digestive process and helps to balance blood sugar better. I learned early on in my years as someone with diabetes, that I would always feel better eating my fruit instead of drinking it.

I hope that this recipe finds it's way into your bowl often, and inspires you to realize that change can be easy when you just think outside of the box.


- 2 small/medium organic Gala apples (or other firm variety)
- 4-5 dates, sliced
- 3 raw brazil nuts, sliced or chopped
- 1 tbsp toasted unsweetened coconut (optional)
- 2 tbsp dried fruit, optional (raisins, currents, cranberries)
- pinch of fresh ground nutmeg
- 1/2 tsp cinnamon
- 1/8 tsp of ginger (optional)
- 1 cup of non-dairy milk

1.) Cut apples into 16 wedges (taking out the core as well). Place in a medium mixing bowl.

2.) Add all but the milk to the bowl, and toss it all together.

3.) Place mixture in a cereal bowl, and fill up with milk.

4.) Crunch, munch, and make yummy sounds.
